OLD FASHIONED FUDGE
3 c sugar
1 c milk
2 T corn syrup
2 squares semi-sweet chocolate
3 T butter
1 tsp vanilla extract
1 c chopped pecans or walnuts
In a medium saucepan, warm heat four ingredients to boiling. Stir constantly. Continue cooking, until temperature on candy thermometer reaches 238°. Remove pan from heat. Add butter and vanilla.
Cool without stirring until outside of saucepan feels lukewarm. Beat mixture until thickened. Quickly stir in nuts. Pour into greased 8x8 pan. Note: do not scrape sides of pan, as mixture on pan may be too sugary.
Cool fudge in pan. Do not cut until completely cooled.
