Pork tenderloin With Blackberry or Black raspberry sauce

1Tablespoon                            paprika

1Tablespoon                            chile powder

1Tablespoon                            salt

1Teaspoon                               sage

1Teaspoon                               black pepper

2 1/2 Cups                               fresh blackberries or frozen, thawed or sub with a jam

1/2 Cup                                   ketchup

1/2 Cup                                   honey

1Tablespoon                            mustard

2 Tablespoons                         balsamic vinegar

1 Teaspoons                            Red pepper flakes


Preheat oven to 350°F. Mix spice mix together in small bowl; rub mixture into pork tenderloins. Place on large rimmed baking sheet with rack so tenderloins are not touching baking sheet. Bake about 40 minutes checking for desired doneness.

Meanwhile, puree remaining ingredients in blender until almost smooth. Strain blackberry puree into heavy medium saucepan; discard solids in sieve. Cook puree over medium-high heat until reduced to 1 cup, stirring frequently, about 5 minutes. Season sauce to taste with salt and pepper.

Brush tenderloin with enough sauce to coat. Continue baking until sauce browns and forms thick glaze, about 10 minutes longer. thinly slice and place on bun with cole slaw. Serve with remaining blackberry sauce.

Cole Slaw


6 cups                                  shredded cabbage

1cup                                                shredded red cabbage, rinsed several times

½ ea                                     onion, thinly sliced

2/3 cup                                mayonnaise

2 tablespoons                      vinegar

2 tablespoons                      vegetable oil

2 1/2 tablespoons                sugar, or to taste

1/2 teaspoon                        celery seed

1/4 teaspoon                        salt and black pepper, or to taste


Toss cabbage in a large bowl with onion . In a bowl, whisk together the remaining ingredients. Pour the mixture over the cabbage and onion and toss to coat thoroughly. Refrigerate until serving time.
