Tomato Salsa

4 lbs vine-ripened red tomatoes (about 5 medium), diced

1/2 medium red onion, diced

1/2 cup fresh cilantro, chopped

2 Serrano or Jalapeno peppers, seeded and diced

2 garlic cloves, minced

pinch sugar (if necessary to balance the acidity of the tomatoes)

3 juice of lime

Tabasco to taste (optional)

Kosher salt and freshly ground black pepper

1. Combine all of the ingredients in a mixing bowl and toss well. Season with salt and pepper. Allow the salsa to sit for 15 minutes before serving.

Guacamole

2 avocados, seeded, peeled and diced

1 garlic clove, minced

1 tablespoon red onion, diced

2 tablespoons cilantro, chopped

1 juice from a lime

1 Serrano or Jalapeno peppers, seeded and diced

Salt and Freshly Ground Pepper, to taste

1. Mix all ingredients in a bowl with the back of a fork until the avocado is mashed and incorporated with the rest of the ingredients.

Mango Salsa

2 Mango, peeled, pitted and diced

2 tablespoon red onion - diced

2 Tbs chopped fresh cilantro

2 tsp Serrano or Jalapeno peppers, seeded and diced

2 mint leaves, approx

1 juice of lime

Salt and Freshly Ground Pepper, to taste

1. Mix all ingredients in a bowl, let sit for about 15 minutes to allow flavors to blend.

Corn and Pepper Salsa

4 ears corn, boiled and cooled, corn removed from husks

1 medium red onion, chopped

2 juice of lime

1 red pepper, chopped

4 Serrano or Jalapeno peppers, seeded and diced

1 clove garlic, minced

2 Tbs cilantro, chopped

4 mint leaves, approx

1-2 Tablespoons of red wine vinegar

2- 6 drops of hot sauce, according to taste (or use hot red wine vinegar and omit regular red wine vinegar)

2 Tbs Olive Oil

salt and pepper, to taste

1. Mix all ingredients in a large bowl.
