Marinades from A Forkable Feast

WHISKEY AND STOUT MARINADE

Ingredients:
4 oz Jack Daniels Whiskey
3 TB Honey
3 Tb Worcestershire Sauce
1 tsp White pepper
1 TB Tabasco sauce
2 Garlic cloves minced
1 TB cinnamon ground
12 oz Guiness Stout
4 oz Peanut oil
3 tsp salt
2 oz Soy sauce

Preparation: Start with a saucepan. Mix the Guiness Stout, the Jack Daniels & the oil. Add the Worcestershire & tabasco sauce. Bring to a slow boil & add the white pepper, garlic, salt, cinnamon, & honey. Mix well, turn off heat, and allow to cool to room temp. Use immediately or store in a glass jar in refrigerator for up to 1 week.

CHIMICHURRI MARINADE

Ingredients:
1 tbsp Paprika
1 each Chipotle Chili
1 tbsp Rosemary
2 tbsp Parsley - Chopped
2 tbsp Oregano - Chopped
2 tbsp Thyme - Chopped
1 cup Virgin Olive Oil
3 cloves Garlic - Chopped
3 tbsp Vinegar
1/2 tsp Sea Salt
1 dash Black Pepper

Start by Heating the olive oil in a saucepan until hot. Remove the heat and start adding the thyme, oregano, parsley, rosemary, chili paprika, garlic, vinegar, salt and pepper. Stir and leave at room temp for 1 hour.

Use the marinade to cover the steak in a dish or container of your choosing. This recipe works best on 1lb top sirloin steak. Make sure that you are turning the steak over several times to evenly coat it. NOTE: some of the remaining marinade to serve with the final product. Cover or close the container and refrigerate for 1 hour.
