2 pounds manda smoked sausage, skinned
2 pounds ground beef
1 pound ground pork
2 pounds cooked long grain rice
3 pounds onions, chopped
1 whole celery, chopped
2 cloves garlic, chopped fine
3 bell peppers: 2 green and 1 yellow, chopped coarse
Bill's super seasonings mix
1 cup or more salt for rice
2 stalks green onions, chopped
1 parsley, chopped
Cook rice 2 parts water to 1 part rice in salted water. Set on side.
Season the meat with Bill's seasoning mix and brown at medium heat for 15 minutes in a heavy skillet. Set to the side in a big bowl. Clean the skillet with paper towel. Wilt onions, celery, bell peppers and garlic in skillet with Bill's seasoning. Mix all ingredients together in a big bowl. Place in pans and cook at 300 degrees for 20 min. Serves the Carville family or your whole gang.
