Pikantiki  Salad

2- 2 1/2 pounds   cabbage (pre shredded)

1/2 cup    carrots

1/2 cup   red bell pepper

1/4 cup   celery

1 tspn.     salt

1 tspn.     pepper

1 cup     red wine vinegar

5-6 kalamata olives

 Extra virgin olive oil to garnish

Put Cabbage in a glass or plastic container with a lid.

Shredded carrots,and red bell pepper (matchstick size).

Chop celery.  Combine all vegetables with cabbage.

Add salt, pepper and vinegar, and mix.

Place  lid on the container and shake till well blended.

Refridgerate to marinate, allow about 2+ hours.

When ready to serve garnish with olive oil to taste. and top with

 kalamata olives.
