Fired-up Chipotle Chili from Suburban Chef Barbie Hahn

When the days turn cold, we run to our kitchens' for comfort. With new years resolutions still fresh in our minds we may think that the steaming hot bowl of chili is off limits. I am here to tell you that you can enjoy that bowl of chili without guilt with just one minor adjustment, ground turkey!  Ground turkey is up to 95% lean. Has the same mouth feel and texture as ground beef, without all the fat.  I recently came in third in the Findlay Market Chili Cookoff with my chili recipe.  I cooked it with beef for the contest, but always serve it with turkey to family and friends.  I hope you find this a welcome addition to your recipe box!

Fired-up Chipotle Chili

2 pounds lean ground beef or Turkey

2 cups chopped onion

3 Tablespoons ground cumin

3 Tablespoons ground chili powder

4 cloves garlic skins removed and chopped in half.

1 Tablespoon chopped canned chipotle chilies in adobo sauce

2 and ½ cups beef broth

1 can fireroasted tomatoes

1 cup chopped fresh cilantro

Toppings: grated cheddar cheese, sour cream and green onions.

Brown beef, onions and garlic in large dutch oven for about 10 minutes. Remove garlic. Add cumin, chili powder and chipotle chilies, and sautee for 5 minutes. Add tomatoes, broth and ½ cup cilantro.

Reduce heat and cook for 1hour, adding additional water or broth as needed. When ready to serve, mix in remaining cilantro, season with salt and pepper. Serve with cheese, sour cream and onions.
