Mexican Chicken Chili

1 lb.     Chicken Chorizo Sausage

1 lb.     Chicken Mexican Sausage

2          Onions, large, chopped or thin sliced

2          Yellow Tomatoes, chopped

2 cans  Green Chilis, chopped

2 tbsp  Cumin, ground

2 tbsp  Pepper, white

2 tbsp  Cilantro, fresh is best.  If using dried, use 2 tsp.

2 cans  Tomatillos

2 cans  White beans, either northern, kidney or your preference.

1 lb.     White cheese, grated, preferably Monterey Jack

1 pt.     Sour cream (optional)

Remove casings from sausages.

Place in a large pot or dutch oven with the onions over medium high heat to brown.  Stir frequently, chopping into smaller pieces.  Should be fully cooked in 3 or 4 minutes.

Add yellow tomatoes, green chilis and tomatillos with the juice from the cans. 

Add cumin, cilantro and pepper and stir to combine.

Switch to low heat and simmer for 20 to 30 minutes and serve with grated cheese, sour cream and tortilla chips.
