Healthy Holiday Appetizer

Tomato Basil Bruschetta

8 oz. Fresh mozzarella, sliced

Chopped Basil leaves for garnish

Bruschetta Topping

1 ½ cups Dei Fratelli Petite Diced Tomatoes, drained (approx. ½ of a 28 oz. can)

3 T. Fresh basil, chopped

2 cloves fresh garlic

2 T. Carapelli extra virgin olive oil or the Meijer Gold Roasted Garlic & Chive oil

1 loaf whole grain Ciabatta bread, sliced ½ in. thick

Preheat the oven to 375 degrees. Brush slices of bread with olive oil or Meijer Gold oil and rub with cloves of garlic. Place on sheet tray and place in the oven for approx. 5 minutes on each side or until golden brown. Remove bread from oven to cool. Combine all of the ingredients for bruschetta topping in a bowl. Mix gently. On cooled bread, place sliced mozzarella or spread on Meijer Gold bread spread. Add a spoon full of bruschetta topping. Garnish with chopped basil.

Zesty Stuffed Peppers

Yield 6 servings


6 medium green bell peppers, tops removed, seeded

1 pound lean ground beef

1/4 cup chopped onion

1 (11 ounce) can whole kernel corn, drained (or Meijer frozen corn)

1 (8 ounce) can tomato sauce

1 cup cooked brown rice

1/4 cup steak sauce (Wild Mushroom Steak Sauce or Vidalia Onion Steak Sauce)

1/4 t. salt

1/4 t. pepper

In a large kettle over medium-high heat, cook peppers in boiling salted water for 3-5 minutes. Drain and rinse in cold water; set aside.

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add remaining ingredients and mix well. Loosely stuff into peppers. Place in a 9-in. square baking dish. Bake, uncovered, at 350 degrees F for 30-35 minutes or until peppers are done and filling is hot. Recipe adapted from
