8 ounce wheel of Brie
1 cup Champagne
1 packet unflavored gelatin
1 handful of strawberries
1 sprig mint
Place wheel of brie on a flat plate and put to the side.
Wash strawberries and mint, pat dry. Carefully slice fruit vertically into thin slivers. Pull some mint leaves from sprig and place strawberries and mint to side.
Pour champagne into small saucepan and sprinkle with unflavored gelatin packet. Gently stir and then let sit for five minutes until firm. Place saucepan over low heat, disolving gelatin in champagne. Place saucepan in a bowl of ice water. Stir until champagne gelatin mix become more firm.
Use a pastry brush to lightly glaze entire top of brie.
Place strawberry slices on top of brie, arranging fruit and mint leaves into either a decorative pattern or floral image.
Carefully brush top of fruit and mint pattern with champagne and gelatin solution. Continue brushing top until strawberries and mint are completely covered by glaze.
1-46 oz can of pineapple juice
1-6 oz can of frozen limeade
2-750 ml bottles of Champagne
