Recipes from "Addie's Way" Cookbook


1 large onion, chopped

½ Cup olive oil

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon allspice

1 pound ground pork or beef

½ cup pine nuts (optional)

1 cup Uncle Ben's long grain rice

2 cups College Inn chicken broth


Brown onion and spices in oLive oil. Add ground meat until brown. Stir in the optional pine nuts just until brown, Stir in rice to blend, Add broth and bring to a boil. Reduce heat to tow, Cover and cook without stirring for 20 minutes. Remove from heat.

serves 4-6


2 pounds green beans (or 2 16-ounce cans)

1 6-ounce car) tomato paste

1 ½ cups warm water

3 cloves Barlic, minced

½ cup onion, diced

1/3 cUp oil

1 ½ teaspoori salt

¼ teaspoon pepper

½ teaspoon allspice


Saute onions in oiL untft golden brown. Add garlic and spices. Stir well. Add tomato paste and blend with onion mixture. Gradually add warm water. 8rng to boil. Add cleaned fresh green beans or drained canned beans. Cook until desired tenderness.
