Sautee Shrimp with Garlic Butter and Tomatoes
This is a very simple dish that we came up with to make your new years a little easier.
1-pound Jumbo Shrimp (peeled and deveined)
3 cloves garlic (minced)
2 shallots (minced)
1 bunch parsley (chopped)
1 large tomato (diced)
¼ lb unsalted butter
2 cups cooked rice
Juice of 1 lemon
• Heat a large skillet on med high heat. Once hot season the shrimp with salt and pepper and toss them into the skillet. Brown the shrimp on both sides and then add everything except the lemon. Cook every thing together for 1-2 minutes then add the juice of the lemon.
