Kia's Tortilla Soup

Tortilla Soup

 

2 tablespoons vegetable oil

1 large onion, diced

1/2 red pepper, diced

1/2 orange pepper, diced

2 cloves garlic, minced

2 1/2 tablespoons ground cumin

1 (28 ounce) can petite diced tomatoes

2 (4 ounce) cans chopped green chile peppers, drained

4 (14 ounce) cans vegetable broth

Salt and pepper to taste

1 (11 ounce) can whole kernel corn, drained

Tortilla chips

1 cup shredded Cheddar cheese

1 avocado, peeled, pitted, and diced (optional)

 

 

  1. Heat the oil in a large pot over medium heat.  Stir in the onion and peppers, garlic, and cumin, and cook 5 minutes, until vegetables are tender.  Mix in the tomatoes and chiles.  Add the broth, and season to taste with salt and pepper.  Bring to a boil, reduce heat to low, and simmer for 25 minutes.
  2. Mix corn into the soup, continue cooking for 5 minutes.  Place a few tortilla chips in the bottom of each serving bowl, and then ladle soup into bowls.  Top with cheese and avocado.
