Balsamic Roasted Green Beans and Portabella Mushrooms

Balsamic Roasted Green Beans and Portabella Mushrooms

 

Recipe:

2 Lbs. Fresh Green Beans, trimmed

15 medium portabella mushrooms, sliced

1 red- bell pepper, cut into ½ inch wide strips

1 small red onion, sliced

2 cloves garlic, sliced

3 tbsp. balsamic vinegar

4 tsp. olive oil

Freshly ground black pepper and sea salt

 

Preheat oven to 400 degrees.  Place fresh green beans, sliced portabella mushrooms, bell pepper, onion, garlic, balsamic vinegar and olive oil on a sheet pan.  Toss to coat vegetables with oil mixture.  Roast for about 20 minutes or until vegetables reach desired tenderness.  Season with fresh cracked black pepper and ground sea salt.  Serve immediately.  Serves 10.
