Balsamic Berry Napoleons with Basil

Prep time: 20 minutes

Bake time: 15 minutes

Make ahead: Pastry can be baked, cream whipped and strawberries dressed early in the day. Assemble just before serving.


1 sheet (from a 17.3-ounce package) frozen puff pastry, thawed


1 cup heavy cream

1/4 cup sugar

1/2 cup crème fraiche or sour cream


1 1/4 cups sliced strawberries

1/4 cup strawberry jam

2 tablespoons balsamic vinegar


Confectioners' sugar

Basil (or mint) leaves


Heat the oven to 400°F.


Unfold the pastry sheet on a lightly floured surface.  Using a biscuit or cookie cutter, cut the pastry into 8 rounds; place on a baking sheet. Bake 15 minutes or until golden brown.  Cool 10 minutes.  Split each pastry into 2 layers.


Whip the heavy cream; gradually add sugar.  Gently fold in crème fraiche or sour cream.


Toss the berries with jam and vinegar; let stand for 5 minutes.


Spoon berries onto each of the pastry bottoms. Top with cream mixture; cover with top half of pastry on cream.  Sprinkle with confectioners' sugar and garnish with basil or mint. Serve.
