Simple and Delicious Strawberry Pie from Barbie Hahn

Simple and Delicious Strawberry Pie in 15 minutes


1 store-bought graham cracker, or chocolate  pie crust.

2 packages strawberries, rinsed with green tops removed.

1 cup strawberry jelly.

(If using raspberries or blackberries use that flavor of jelly)

1-3 Tablespoons water

8 ounces low fat cream cheese, room temperature.

1/3  cup sugar

½   tsp. vanilla

½ tsp. almond extract

1/3 cup toasted sliced almonds


In small pan over low heat, melt jelly and stir in enough water to loosen to make glaze. Melt for 2-3 minutes. Do not boil, melt.

Mix room temperature low fat cream cheese, sugar, vanilla and almond extract until smooth.

Spread cream cheese mixture in bottom of crust to form thin bottom layer. This acts as a "glue" for the strawberries.

Place strawberries cut side down on cream cheese layer. Forming a circ le around outside edge and working into center.

Drizzle glaze over strawberries.

Sprinkle toasted almonds around outside edge of crust.

Pop in fridge for 5 minutes to let everything firm up.

Will keep in fridge for up to one day. But it won't last that long!
