Foccacia and rolls.

In a large mixing bowl:

Add 1 1/4 cup of warm water
1 teaspoon of kosher salt
1 pack of rapid rise yeast
Mix well and let it rest for about 3 minutes

Add 3 1/4 cups of all purpose flour
mix well until it forms into a ball
add more flour as needed

Bring dough out of the bowl and knee for 10 minutes only.  Spray the bottom of the bowl with vegetable spray and place the dough in the bowl and also spray the top and cover with a
clean towel and set aside  in a warm place.
Let the dough rise for only 1 hour.
Roll the dough into about baseball size roll and  place on a cookie sheet   Slice a crisscross in the top of each biscuit
Mix  1 egg with a tablespoon of cold water and brush each biscuit.
Bake in a preheated 400 degree oven and bake for 18 to 20 minutes only.

This dough can also be made into pizza, foccacia, bread sticks calzones and of course rolls.

My recipe for Italian Sausage.

I pack of Mild Italian Sausage.
1/4 cup extra virgin olive oil
2 cloves of Garlic chopped
1 medium onion thinly sliced
1 red pepper and
1 green pepper.
2 cans of crushed tomatoes

Take the casing off the sausage and cut into bite size pieces.
Add the 1/4 cup of oil into a large skillet on medium high heat, and add your onion
Cook for about 3 minutes.  Then add the sausage  and cook for another 5 minutes and add your garlic last.
You do not want the garlic to burn.
Add the crushed tomatoes and peppers and bring down the heat to a simmer and cook for about 15 to 20 minutes.
You can serve this over pasta, mashed potatoes or rice or anything else you would like.
Add a salad and some Italian bread and you have a  fantastic and gourmet meal.
