Two heads Romaine chopped and rinsed and put into large salad bowl 1 pint assorted cherry and grape tomatoes, cut in half. Put in salad bowl 8 slices of maple or applewood smoke bacon cut into 1" pieces and then browned in saute' pan. Drain on paper towel (cooking bacon whole and then crumbling does not look as nice but have done with leftover bacon) Remove all but 1 tablespoon of bacon drippings from pan.
Dressing 1 clove of garlic chopped in half 1 Tablespoon red wine vinegar 1/3 to 1/2 olive oil based mayo Pepper and salt
Saute' garlic in bacon drippings until fragrant. Remove garlic. Turn off heat. Add mayo, mix, then add vinegar. Mix all brown bacon bits from bottom of pan into mixture.
Pour dressing over lettuce and tomatoes and toss, add bacon then toss again. Season with Salt and Pepper as desired.
