Pineapple- Mango Salsa for Jerk Seasoned Chicken Breast

 

2 cups medium diced mangos

2 cups medium diced pineapples

1/2 cup small diced red peppers

1/2 cup small diced red onion

1 or 2 each finely chopped jalapenos

1/2 cup rough chopped cilantro

1 TBL cumin

1 1/2 TBL garlic

1/2 cup red wine vinaigrette

Drizzle of (enough to coat) Virgin Olive Oil

Salt and Pepper to taste

 

Grilled Chicken Breast (Boneless/Skinless) seasoned with smoked paprika, Caribbean jerk seasoning, olive oil, garlic and salt and pepper. Grill as usual.

Combine all ingredients for the salsa together and coat with the olive oil and vinaigrette, salt and pepper to taste. Top the grilled chicken breast with the salsa and serve. Serves 4 guests – Enjoy!
