Italian Meatloaf from Gramma Debbie’s Kitchen at Findlay Market

1 small onion, diced
1 tsp olive (or other cooking) oil
2 cups diced tomatoes (canned or fresh)
1 tsp salt
1 tsp black pepper
½ tsp sugar
1 tsp oregano
2 lbs. ground beef (sirloin, or 90% lean is recommended)
1 lb. Parma Italian sausage (available at Kroeger and Sons Meats)
1 egg
3 cups bread crumbs (using whole wheat bread gives extra fiber)
1/3 cup milk
First prepare tomato sauce.  Saute diced onions in oil until soft, then add tomatoes, salt, pepper, sugar and oregano.  Simmer for 5 minutes then turn off to let it cool.
Pre heat oven to 350.
Remove casings from Parma sausage, combine with beef, egg, and breadcrumbs, milk and tomato sauce.
Form into 1 large loaf or 2 smaller loaves, or, for individual sized meatloaves, place meat in muffin pans. 
Baking time will differ depending upon size of loaf chosen.  Plan on 50 to 60 minutes for 1 large, 30 to45 for 2 small and 20 to 25 for muffin size.
