French Olives
1-14 ounce jar pimento stuffed green olives, drained and patted dry.
1 clove of garlic peeled
1/2 teaspoon crushed red pepper flakes
zest of one lemon (try to keep zest in a long ribbon)
1/2-3/4 cup olive oil (enough to cover olives in the jar)
Decorative jar
Wrap lemon zest around inside of jar. Place olives with pimento's facing outward in jar until full. Warm olive oil with garlic clove and crushed red pepper flakes. (warming the oil helps infuse the flavors of garlic and red pepper and speeds up the marinating process of the olives) Pour oil over olives. Place garlic clove in between one of the olives so it can be seen through the jar.
Wrap with a pretty ribbon and you have a wonderful gift!
"Montreal Style" Seasoning
This seasoning is great on steaks, hamburgers and pork. Great gift for the Grill Master in your life!
3 Tablespoons kosher salt
1 Tablespoon smoked salt (smoked salts are found in gourmet stores, there are several "flavors" of smoked salts, hickory, alder or mesquite. Smell them and buy the one you prefer) If you do not have smoked salt just use 4 tablespoons of kosher salt instead.
1 tablespoon black peppercorns
1 tablespoon dehydrated onion
1/2 tablespoon dehydrated garlic
1/2 tablespoon crushed red pepper
1/2 tablespoon dried thyme
1/2 tablespoon dried rosemary
1/2 tablespoon dried fennel
Place all ingredients except the salts into a grinder and pulse for a few seconds. This quick process releases the oils in the herbs and spices and kicks up the flavor. Mix in the salts and pour into a small decorative shaker or jar.
