Recipe from Sandy Milton of Alabama

6 chicken breasts (boneless, skinless or chicken tenderloins will do very nicely too)
1/2 cup grated parmesan cheese
3/4 cup Italian bread crumbs
26 1/2 oz. spaghetti sauce, any flavor
2 cups mozzarella cheese
1 egg, beaten
2 to 3 tablespoons oil
salt and pepper to taste

Mix together parmesan cheese, bread crumbs, salt and pepper. Set aside.

Dip chicken into beaten egg, then in bread crumb mixture and coat well. Brown coated chicken on both sides in heated oil.

Cover bottom of casserole dish with part of spaghetti sauce, place browned chicken on the sauce, then pour remaining sauce over the chicken. Cover and bake in a 325-degree oven for 30 minutes. Remove from oven and top with mozzarella cheese, place back in oven for another 10-15 minutes.

Great over noodles.

Everyone's sauce recipe is different. This one is more Sicilian and was handed down from my grandparents. The key is no exact measurements just flavor with ingredients below to taste.  In a large pot
