This recipe is so much fun and has a huge WOW effect for parties. You will be surprised at how easy it is to make, and your friends will be surprised that you made something so spectacular AND delicious with just a few ingredients. It is a great dessert to make outside on the gas grill in the summertime….
1 Fresh Pineapple peeled and cored and chopped into bite size pieces
1 stick salted butter
1 cup brown sugar
1/4 cup dark rum
1/4 cup vanilla liquor
1/2 teaspoon cinnamon
4-6 serving bowls with very hard vanilla ice cream scooped into them.
Melt butter in large sauté pan over medium heat, add brown sugar and stir until dissolved and sugar granules are not longer visible. (rum sauce should not be grainy in your mouth).
Add chopped pineapple to pan and sauté for 1-2 minutes.
Add rum and vanilla liquor and catch on fire. While alcohol is burning off begin to "throw" pinches of the cinnamon into pan. It will sparkle as it catches fire before hitting the pan. (Your guests will go crazy for this trick) Once alcohol has burned off add the rest of the cinnamon to the pan and stir.
Your dish is complete, Pour the pineapple and the rum sauce over the ice cream and enjoy!
