Passover Puffs or Mini Muffins
1 cup water
1/2 vegetable oil
1 cup matzo meal
1/4 teaspoon salt
2 tablespoons sugar
4 large eggs, room temperature
1. Preheat your oven to 400 F. Use a non-stick popover pan or grease a muffin pan and set aside. Combine the water and oil together in a one quart saucepan and bring to a boil.
2. Remove the pan from the heat. Add the matzo meal, salt and sugar all at one time and mix well with a wooden spoon until it begins to pull away from the sides of the pan.
3. Empty into a medium sized bowl or the bowl of your food processor. Add one egg at a time. Beat well after each addition or process 3 seconds after each egg is needed.
4. Fill each popover 3/4 full or the muffin no more than 1/2 full. Place in the preheated oven and bake for 10 minutes. Reduce the heat to 375 F and bake another 35-40 minutes until the popovers are popped or muffins have a nice golden color.
