1 Package of regular white cake mix
Blue Berries, Black Berries and Raspberries
2 Eight Ounce containers of Mascarpone Cheese
Zest of one Lemon
1 Tablespoon Fresh Squeezed Lemon Juice
1 Cup Powdered Sugar
Shaved White Chocolate for Garnishing Sides
Additional Powdered Sugar for Top of Cake
Prepare cake mix according to package directions. Divide batter between two cake pans that have been oiled and floured. Take as many berries as you prefer and place them on the surface of the batter pushing down lightly. Bake cake and cool according to directions.
Mix mascarpone cheese, lemon zest, lemon juice and powdered sugar together.
Remove cooled cake from pans. Place three quarters of cheese mixture onto the first layer of cake. Place second cake layer on top of first, gently pressing down. With a spatula or knife spread remaining cheese around sides of cake. Cover sides with white chocolate shavings. Top cake with additional powdered sugar. Chill until ready to use. Can be made up to one day in advance.
