Enchilado de Camarones (Shrimp in Spicy Sauce)

Makes 4 Servings

1/2 cup olive oil
4-6 cloves chopped garlic
1/4 cup chopped celery
1 cup chopped onions
1 chopped red bell pepper
1-2 chopped chile peppers
1 cup chopped ripe tomatoes
4 ozs. bourbon
1 pound peeled and deveined shrimp, tails on

In a large skillet, heat the olive oil over medium high heat. Add the garlic, celery, onion, peppers and tomatoes. Saute about 2 minutes. Raise the heat to high. Add the bourbon, tomatoes, and shrimp. Cook stirring often until the shrimp are just cooked. Enjoy!
Note: Enchilado is a Cuban sauce. It can also be used with lobster, scallops etc. Can serve with rice or peas or greens on the side.
