Zucchini casserole

Recipe from Julie Gray of Milan, Ind.

Total Time: 1 hour 15 minutes

6 sliced zucchini
1 diced onion
1 stick of butter
Salt and pepper
2 cups of shredded cheddar cheese
2 cups of shredded mozzarella cheese
1 can of diced tomatoes
Parmesan cheese

  1. Using your stick of butter, saute the zucchini and onion in a large skillet until golden brown.
  2. Add salt and pepper while cooking.
  3. Put your zucchini and onion mixture into a large casserole dish.
  4. Add in your cheddar cheese and mozzarella cheese, add in the diced tomatoes.
  5. Stir well.
  6. Cover the top with Parmesan cheese.
  7. Bake 350 for 45 minutes.

Servings: makes 1 large casserole
