Sausage minestrone

Recipe from Katie Radcliff of Indianapolis, Ind.

Total Time: 30-40minutes

1 lb. Italian sausage links
3 cups chopped carrots, celery and onions
2 cans diced tomatoes
Basil, garlic and oregano for seasoning
2 cans chicken broth
1 cup small pasta (such as ditalini)
1 can red kidney beans rinsed and drained

Coat pot with cooking spray heat over medium high heat.

Add the sausage - continuously turn until browned (approx. 4-6 minutes).

Remove from heat cut sausage into 1/4thick slices return to pot over medium heat.

Stir occasionally until no longer pink 3-5 minutes.

Discard the fat.

Stir in vegetable mixture and 1/4 tsp. pepper.

Cook stirring occasionally until vegetables are just tender (approx. 3-4 minutes).

Add tomatoes with their liquid and broth and bring to a boil.

Reduce heat to low simmer.

Stir in pasta cook until pasta is tender (approx. 15 minutes).

Add beans cook until heated through (approx. 2 minutes).

Servings: 4 to 8 people

Comments: You can make this dish in a crock pot.
