Ponchatoula strawberry-amaretto cobbler

Recipe from Gwen Hoover of Ponchatoula, La.

Prep Time: 30 minutes
Total Time: 1 hour and 15 minutes

2 1/2 cups fresh strawberries
1/2 cup sugar
1/2 cup Amaretto
1/4 tsp. Jamaican ginger
1/4 tsp. pure vanilla extract
1 cup all purpose flour
1 cup sugar
3/4 cup milk
1 tsp. cinnamon sugar
1 stick butter (or 1/2 cup margarine)

In a large glass bowl combine sliced strawberries, 1/2 cup sugar, Amaretto, ginger and vanilla, stir well to coat strawberries.

Cover bowl set aside for approximately 20 to 30 minutes to marinate.

Melt butter in the bottom of a 9X13 baking dish.

In a separate bowl combine flour, 1 cup sugar, milk and cinnamon sugar.

Mix well.

Pour mixture into baking dish over melted butter - do not stir. 

Spoon strawberries evenly over batter.

Pour juice from strawberries over dish.

Bake in a 350 degree oven for 45 minutes.

As soon as cobbler comes out of the over sprinkle 2 tablespoons of sugar over top.

Let cool a bit. Enjoy as is or top with whipped cream or your favorite ice cream.
