Sausage biscuit snack/meal

Recipe from Edie Clayton of Broken Arrow, Okla.

Total time : 14-17 minutes

1 lb. sausage (Jimmy Dean, or any brand you like)
2 tbsp. chopped onion
½ tsp. Cajun seasoning
4 eggs
1 tbsp. milk
1 can flaky biscuits
½ cup grated cheese (any kind you like)

Heat oven to 350 degrees.

Open biscuits and peel off half of the biscuit.

Place biscuit half into nonstick muffin pan - firmly push dough into the pan making sure it comes up on the side a little bit. (8 biscuits will make 16)

Brown sausage and onion in skillet over medium heat.

 Stir and break up sausage while browning to make small pieces.

Drain when cooked.

Add Cajun seasoning.

Beat eggs.

Add the milk to the beaten eggs and stir.

Add eggs to cooked sausage and cook until eggs are done.

Take off heat and sprinkle cheese on mixture and mix well.

Put 1½ tbsp. of mixture onto biscuit half and cook for 14 to 17 minutes.


Servings: Makes 16
