Smoky Sausage and Cheddar Potatoes
serves 6
5 cups diced potatoes
1/2 teaspoon kosher salt
2 tablespoons olive oil
2 tablespoons cooked bacon bits
2 tablespoons chopped green onions
1 pound cubed smoked kielbasa
1 cup shredded smoked cheddar cheese
Place potatoes in the middle of an 18-inch length of heavy aluminum foil. Cover with remaining ingredients in the order given. Wrap foil tightly to seal.
(If you are going to freeze this, thaw completely before the next step.)
Bake over medium heat on a grill or in a 375 degree oven for 45 to 60 minutes or until potatoes are tender.
