Baked Potato Soup from Cincinnati and Soup

CINCINNATI AND SOUP: A SECOND HELPING MORE RECIPES FROM THE QUEEN CITY  by Cheri Brinkman  Mac Guffin Productions   @ 2011

BAKED POTATO SOUP
1 (15 1/2 oz can) chicken broth
1/2  cup milk
1/2   teaspoon minced onion flakes
1/2 - 3/4 cup instant potato flakes
Toppings for soup
1/4 cup chopped fresh onions or chives
1/4  cup sour cream
1 baked potato  ( chopped with skin on)
2 Tblsp chopped crisp bacon or salad bacon bits
1/4 cup shredded cheddar cheese
 
1.Mix together chicken broth, milk and dried onions. Heat through.
2. Add instant potato flakes. Use enough to thicken.
3. Remove from heat and put into two bowls.
4. Top each bowl with 1/2 amount of fresh onions or chives, chopped baked potato, sour cream, bacon and cheddar cheese.
This makes two servings and is an easy quick lunch or is great on a cold winter day.
               
Travel "WRAPS" For Sports/ Tailgating etc.
Cold Wrap: For each wrap:
1  wrap tortilla or wheat tortilla
2 TSP spreadable cream cheese
Meat Filling:
4 - 5 slices Cold thin sliced turkey , thin sliced chicken , thin sliced ham
Toppings:
Chopped lettuce/ tomatoes/ shredded cheddar cheese
Sauce:

Burger Sauce
2 Tblsp mayonnaise
2 Tblsp ketchup
2 Tblsp pickle relish
Dash of yellow mustard
Mix and use immediately on sandwiches , hot dogs or hamburgers.
