Apricot sweet potatoes

Recipe from Angie Cox of Mo.

Ingredients:

  • 4-5 fresh sweet potatoes
  • 1 cup brown sugar
  • 1 1/2 Tbsp corn starch
  • 1 cup apricot nectar
  • 2 tsp grated orange peel
  • 1/2 cup hot water
  • 1/8 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup dried apricots, chopped
  • 2 Tbsp butter
  • 1/2 cup pecans
  • marshmallows

Directions:

  1. Clean, slice into chunks and slightly pre-boil sweet potatoes.
  2. Bring the rest of the ingredients (excluding butter, pecans and marshmallows) to a full boil, stirring constantly. Remove from heat when thick.
  3. Add 2 Tbsp butter and 1/2 cup pecans. Pour over potatoes.
  4. Bake for 35 minutes at 350 oven.
  5. Top with marshmallows.
