Creamy Tomato Basil soup from Tom + Chee

Creamy Tomato Basil
8-10 servings
1 46 oz can of tomato juice
1 15oz can of crushed tomatoes
1 15oz can of diced tomato
3TB olive oil
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp coriander
1/2 tsp salt(optional)
1/2 tsp black pepper
1.5 tsp dried basil
1 cup Heavy Whipping Cream (can use half and half)
6 fresh basil leaves
1 cloves fresh garlic
1 Carrot (peeled)
Procedures: To soup pot add, olive oil and dried spices. (except basil) Stir to disperse, and add tomato juice, crushed tomato, and dried basil.
Meanwhile in a food processor, process diced tomato and garlic until smooth. Add to tomato soup base in pot. Add carrot and cook over medium heal until a slow boil begins. Add cream and fresh basil, reduce heat to medium low, and cook 5 min more until all tastes are incorporated.
