Tom + Chee Reuben Soup

Here's Trew's recipe for Ruben Soup:
4oz beef stock
4oz chicken stock
2ribs celery coarsely chopped
1small onion coarsely chopped
1tb cornstarch 2t water
1cup(1/4lb)corned beef chopped coarsely
1cup Swiss cheese shredded
3/4c sauerkraut
1/4 c butter
2c 1/2 1/2
Bring stock & veggies to boil
Reduce heat and simmer 5 min
Add cornstarch slurry (starch+water)
Cook until soup begins to thicken
Add meat+ cheese+ kraut
Melt butter and mix with half n half
Add to soup and mix until smooth
Place back on the heat to warm on low! Do not return to boil
Garnish with toasted rye bread and 1000 island
Easy 1000 island
1/4 c yellow onion
Two olives ( black or kalamata)
1/4 c pickles
Purée in food processor
1c mayo
1c chili sauce ( in the canned tomato part of the store)
Juice from 1 lemon
2t honey
Mix all ingredients and store over night for best flavor.
