Black Bean Soup from Giovanna Trimpe

Black Bean Soup

Black bean soup ingredients:

1/4 cup of extra virgin olive oil or canola oil
one cup chopped red onion
one teaspoon of freshly cracked pepper or other pepper.
two cloves garlic minced
one teaspoon dry oregano
two teaspoons of ground cumin
two 15.5 ounces of canned black beans (undrained)
one teaspoon kosher salt or sea salt
1/2 cup water
one teaspoon red wine vinegar
fresh lime
Preheat the oil in a soup pot on medium low heat.  Add the onions, pepper, and salt
stir and cook for about 5 minutes.
add garlic, oregano, cumin and cook for another one or two minutes.
Stir in the beans, add the water, and bring to a boil.
Reduce heat and simmer for 15 to 20 minutes.
Stir in the red wine vinegar.
At this point very carefully remove one or two cups in a medium size bowl mash the beans and
return to the pot.   This will thicken the soup.
Serve with white or brown rice, top with sour cream and chopped green onions if you like.
The soup will taste as if you have been cooking it all day.
Limoncello and black raspberry sparkling flavored water called ICE is available in the soft drink area. 
In a shaker, add one cup ice, one shot of limencello
one shot of whippped flavored vodka
two shots of the sparkling drink.

Shake well and pour in a martini glass rimmed with red sugar.
