Potatoes and Green Beans with Pancetta

Potatoes and Green Beans with Pancetta

1/4 cup olive oil
3-4 cloves garlic, chopped
1/4 pound pancetta, julianned
1 pound potatoes cut into 1/2 inch pieces, boiled and drained
1 pound green beans, boiled and drained
1-2 sprigs fresh rosemary, bruised
salt and pepper
 
In a large heavy skillet combine the olive oil and pancetta over medium high heat.  Cook until the pancetta renders its fat and is just browned.  Add the garlic and rosemary and saute about 1 minute.  Add the potatoes and stir to combine well.  Add the beans and stir to combine well.  Season to taste with salt and pepper.  Stir.  Cook until well heated.  Enjoy!
