Stuffed Manicotti

Recipe from Lisa Titus of La.

1 lb of ground beef

1 green bell pepper

1 red bell pepper

1 onion

1 box of chopped spinach

1 small container of cottage cheese

1 jar of spaghetti sauce

1 box of manicotti shells

Season All

 

Cook the meat with the onions and bell peppers (be sure to drain off the excess grease.) Sauté this mixture untill the onions are clear. Take half of the jar of spaghetti sauce and mix it well with the meat mixture. Let the meat simmer awhile. Be sure to stir the mix occasionally. Place the manicotti shells in boiling water for about 5 minutes. Now let them cool. Take the meat mixture from the heat and add in the cottage cheese and chopped spinach. Stir this all together well. Take the shells and place the mixture inside them and lay them on a baking pan. Then take the remaining spaghetti sauce and use it to cover the top of the manicotti. You may also place some cheese on top if you would like. Cover and bake at 375 degrees for 35 minutes. To compliment this dish serve it with a salad and garlic French bread.
