Lucky Leprechaun Bailey's Irish Cream cupcakes

Preheat oven to 350 degrees

Prepare cupcake pan with liners-makes 18 cupcakes


1 boxed chocolate, chocolate fudge or devil's food cake mix

1 box instant chocolate pudding mix

3 eggs

1 cup Bailey's Irish Cream liquor

1/2 cup sour cream

1/2 cup oil

Mix dry ingredients, add eggs, oil, sour cream and Bailey's.  Place 1/3 cup of cake mix in each liner. Bake for 16 minutes. Let cool completely.


I stick butter, room temperature

2 cups confectioner's sugar

½ teaspoon vanilla

3 Tablespoons Bailey's Irish Cream Liquor

In a large mixing bowl with hand mixer beat butter, sugar and vanilla.  Add Bailey's one tablespoon at a time until Icing is fluffy, but stiff enough to pipe through a piping bag if desired.

Place icing in piping bag with large star tip.  Swirl Icing on top of cooled cupcakes like a creamy whip.

Decorate with  green sprinkles and a lucky Irish coin if desired.
