Chicken saltimbocca alla Marsala
Ingredients for 4 people
• 2 # chicken breast
• 8 sage leaves
• 4 slices of prosciutto cut in half
• 8 slices of provolone
• 2  cups of mushrooms
• 1 cup of marsala
• 1 cup of chicken broth
• 1 table spoon butter
• 1 pound fresh pasta
• Flour for dredge
Cut the chicken into 8 scaloppini dredge in flour and sear both sides in a hot pan. Top each one with sage then prosciutto and add provolone at the end, continue cooking. Add the butter and mushrooms deglaze with Marsala, add chicken broth, let reduce for 10 minutes. Cook your pasta and serve chicken over.
