Pico de Gallo from Mama Lo Hizo

1 Red Onion finely chopped
4 Roma Tomatoes seeded and chopped
1 Jalapeno, seeded and finely chopped
1 Tablespoon fresh cilantro chopped
1/2 Teaspoon lime zest
1 Tablespoon fresh lime juice
1 Tablespoon olive oil
1 Tablespoon Red Wine Vinegar
Salt and Pepper to taste
Mix all ingredients thoroughly and enjoy.
