Air Popped Popcorn
Place 1/4 cup popcorn kernels in a brown paper lunch bag. Fold the top of the bag over 3 times. Place in the microwave on its side and pop for 1 1/2 to 2 1/2 minutes – it will just depend on your microwave. You might have to experiment a little to get it right. It takes exactly 2 minutes in my microwave (and yes, there are a few unpopped kernels, but I'm ok with that). If you eat the first batch quickly and still want more, throw another 1/4 cup of popcorn into the same bag and pop more!
Trail Mix
Assemble snack sized zip top bags with their favorite mix of - dry cereal, raisins, crasins, dried cherries, nuts, goldfish crackers, tiny pretzels, etc.
Ants on a Log
Cut celery into 3" pieces. Fill center groove with peanut butter, almond butter, or sunbutter. Top with raisins.
Fruit Kebobs
Cut bowls of cantaloupe, watermelon, green grapes, red grapes, pineapple and strawberries. Thread the fruits onto wooden skewers (find them with barbecue supplies at grocery store).
Frozen Grapes
Wash red or green seedless grapes. Place in paper or plastic cups in freezer and freeze until firm. Eat while still frozen - these taste like bites of popsicle!
Mock Banana "Ice Cream"
Peel a banana and freeze it till firm. Allow to thaw for 2-3 minutes at room temperature then puree with a food processor till smooth. You can add a few strawberries to add flavor and color. Or you can stir in some mini chocolate chips or drizzle with a little chocolate syrup.
