Mushroom Croque – Monsieur with Mornay Sauce
„« 8 slices good crunchy bread like a Ciabatta
„« 12 oz. thinly sliced Ham
„« 8 oz. shredded Gruyere Cheese
„« 2 Tablespoons grated Parmesan Cheese
Ingredients for Mornay Sauce:
Roux for thickening: 4 Tablespoons Unsalted Butter & 4 Tablespoons Flour (whisk together in a small saucepan until incorporated and it turns a light blonde color).
„« 3 Tablespoons Unsalted Butter
„« 1 Tablespoon Garlic, finely chopped
„« Splash of White Wine
Sauté the above ingredients.
Whisk in:
„« 1 cup Chicken Stock
„« 2 cups Heavy Cream
„« 1/2 cup Parmesan Cheese
Bring to a boil; reduce, add Roux to thicken the sauce.
Ingredients for Mushrooms:
„« 4 Tablespoons Olive Oil
„« 1 Tablespoon Shallot, minced
„« 1 cup mixture of Cremini & Shiitake Mushrooms, sliced
Sauté the above ingredients, set aside.
To assemble the sandwiches:
First layer is a slice of bread, then Ham, Gruyere, Parmesan, Mornay Sauce, Bread.
Grill the sandwich in a Panini Press or a cast iron grill pan.
