Cooling Off With Pears - Giovanna Trimpe

Pear Chicken Salad
This recipe was sent to Giovanna by a fan at Macys downtown. Her name is Anna Skrzelowski.
3 fresh Bosc Pears
3 green onions - sliced
1/3 cup diced green pepper
3/4 cup mayonnaise
one package of Italian dressing in a pack.
3 cups of cooked shredded chicken
2/3 cups celery
1/4 cup diced water chestnuts
1/2 teaspoon curry powder
Core and dice pears, toss the pears with the chicken, green onions, pepper and water chestnuts.
Blend mayonnaise with the packaged of Italian salad dressing and add the curry powders and mix well.
Add the pear and chicken mixture to with the dressing and mix well.  ENJOY!!
Limencello Freeze
This is actually low fat dessert!
1/4 cup lemon curd.
1/4 limencello  (Lemon Liqueur
2 cups vanilla low-fat ice cream
Combine curd and liqueur in a small bowl, stirring  with a whisk and blend.  Add ice cream to curd
mixture; stir gently to swirl.  spoon 1/2 ice cream mixture into each bowl.
You may double this recipe or as many times as you need.
