Directions:
First coarsely chop up some fresh zucchini. Next add in some freshly chopped tomatoes, chopped jalapenos, and chopped onions as well as a little salt and pepper to taste. Now cook this mixture in a stick of margarine until it is tender. You may want to add about 1/2 cup water and use an iron skillet. Then take the mixture and wrap it in a warm flour tortilla. And for those carbohydrate watchers feel free to substitute the tortillas for low-carb ones. Enjoy!
