This is a quick use "what's on hand" recipe to make delicious fruit muffins in a big hurry! This is an older recipe from the 1970's or so but still a good one.
2 C Pancake Mix ( dry) Original. Buttermilk or Complete
¼ C Sugar
1 ¼ C Milk
1 Egg ( beaten)
2 Tbs. vegetable oil
** Fresh or Frozen Blueberries ¾ C
Off the Shelf: 1 jar Preserves: Raspberry , Strawberry. Apricot ,Orange Marmalade
Muffin Pan and Paper Liners
1. Preheat oven to 425 deg.
2.Line 12 muffin cups with paper liners.
3.Combine all ingredients except fruit/ jam.
4. If you are using FRESH fruit add next .
5. Pour to ½ full into the prepared cups.
6.Spoon in the center of each cup 1 tsp of the fruit preserves
7. Top with remaining batter.
8. Bake about 17 min or until light golden .
