Chicken Sausage Gravy from Piper's Cafe

Step 1:
1 lb Chicken Sausage (from Marksbury Farm Market in Lancaster, KY)
½ Yellow Onion, diced
2 cloves Garlic, minced

Cook all in sauce pot until the onions are soft, stirring constantly. Do NOT pour off the drippings.
 
Step 2:
Slowly stir in:
3 cups Silk®, Vanilla flavored soy milk
1 cup Chicken Stock, preferably low-sodium

Simmer, stirring constantly, until the mixture begins to simmer. In a separate cup, mix together 3-4 tablespoons of corn starch with water until corn starch is well blended. SLOWLY stir this slurry into your gravy, stirring constantly, until the desired thickness is reached.
 
Step 3:
Remove from heat and stir in:
2 tbls Butter
1 tsp Liquid Smoke

Taste and adjust seasonings and possibly thickness. Serve over piping hot homemade biscuits!
