SICILIAN TOMATO PASTA SALAD

MAKES 4 SERVINGS

1/2 CUP OLIVE OIL

3 TABLESPOONS RED WINE VINEGAR

1/2 TEASPOON GRANULATED SUGAR

1/2 TEASPOON DRIED OREGANO

3-4 CLOVES CHOPPED GARLIC

1/2 CUP CHOPPED ONIONS

2 CUPS CHOPPED RIPE TOMATOES

1/2 CUP CHOPPED FRESH BASIL

SALT AND PEPPER

GRATED ROMANO CHEESE

IN A LARGE NON REACTIVE BOWL COMBINE THE VINEGAR, SUGAR, AND OREGANO. WHISK WELL TO COMBINE. SLOWLY DRIZZLE IN THE OLIVE OIL WHISKING CONSTANTLY. BLEND WELL.

ADD THE GARLIC, ONION, TOMATOES BASIL, AND SALT AND PEPPER TO TASTE GENTLY STIR TO COMBINE WELL. LET STAND AT ROOM TEMPERATURE 1 HOUR.

COOK THE PASTA AND DRAIN WELL. PUT THE PAST BACK IN THE POT IT WAS COOKED IN. ADD THE TOMATO MIXTURE AND MIX WELL. SERVE WITH THE GRATED ROMANO CHEESE. ENJOY!
