The Golden Lamb Recipe: Lamb Sliders
Tomato chutney
2 cups of sugar
2 cups of red wine vinegar
2 cups fresh diced tomatoes
1 tablespoon kosher salt
1 pinch of white pepper
Place ingredients heavy bottom sauce pot and place on stove over medium heat for 30 to 40 minutes, just until all liquid is dissolved. Tomato chutney can either be blended until pureed or left chunky.
Lamb Sliders
For Seasoning
¼ cup kosher salt
1tablespoon whole fennel seed, toasted and ground
1 tablespoon fresh cracked black pepper
1 lb. ground lamb
I package of slider buns, toasted
1 package of boursin cheese
Portion ground lamb into 2 oz. balls, then shape into patties. Season both sides of patties with lamb seasoning. Heat pan or electric griddle over medium to medium-high heat (about 400 degrees). After searing the patties on both sides, remove from griddle, place a tablespoon of boursin cheese on each burger, top with tomato chutney.
