Kentucky Sweet Potato Casserole

Ingredients:

  • 3 cups mashed sweet potato
  • 1/3 cup of flour
  • 1/2 tsp. of salt
  • 2 slightly beaten eggs
  • 1/3 of a stick of butter
  • 1/4 cup of water
  • 1/4 cup of evaporated milk
  • 1 tsp. vanilla
  • 1/2 cup pecan halves
  • 1 jigger Kentucky bourbon

Topping:

  • 1 cup granulated sugar
  • 1 cup light brown or bourbon vanilla sugar
  • 1/3 stick butter

Directions:

  1. Preheat oven to 350°F.
  2. Mix all ingredients except pecans and topping in a large bowl.
  3. Pour into a buttered 9x12 casserole dish.
  4. Combine topping ingredients and crumble over sweet potatoes.
  5. Cover top with broken pecans and bake for 25 minutes.
  6. Check periodically, when pecans are starting to get too dark put a foil tent over the dish.
